These pictures were a TREASURE that I found in my box--they were taken WAY back in 2012.  My boy, and hubby went on a Scout camp trip.  For this layout I got to used the Oh, Happy Day and the exclusive Scrapbook Circle digital cuts--LOVE how it came together-QUICKLY!

Baked Parmesan Garlic Herb Salmon
Serves: 4-6
Ingredients
  • 1½ pound salmon of choice
  • 3 Tablespoons butter
  • 1 Tablespoon Lemon Juice
  • 3 cloves garlic, minced
  • 2 Tablespoons Grated Parmesan Cheese
  • ½ teaspoon Italian Seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 Tablespoons fresh parsley, chopped
Instructions
  1. Preheat the oven to 375 degrees. Lay out a piece of foil long enough to fold up the salmon inside. In a small saucepan over medium heat melt the butter. Remove from heat and add lemon juice, garlic, parmesan cheese, Italian seasoning, salt and pepper.
  2. Place the salmon skin side down on the foil. Brush with the garlic butter marinade. Sprinkle the fresh parsley on top. Fold up the edges of the foil and wrap and seal the salmon inside.
  3. Place in the oven and bake for 13-15 minutes or until the salmon is firm. Unwrap the top of the salmon and broil the top for 2-3 minutes watching closely so that it doesn't burn. Remove from the oven and garnish with additional chopped parsley and sprinkle with additional parmesan if desired.

I have to say this layout was SO totally fun to make!  One day my kids had assembled all of their lego people--they decided to take closeups of a few of them.  My challenge for Scrapbook Circle was to make a layout about the every day--yep, legos on the floor pretty much ALL the time.
For this layout I used the Oh, Happy Day kit for March--FUN!

This was such a fun adventure with my youngest.  Everyone else was off doing something else--and I had wanted to take someone with me to one of my FAVORITE places here in Arizona.  Boyce Thompson Arborateum.
I used the main kit Oh, Happy Day, and one of the add ons; Good Vibes on this page--I decided to just have fun cutting different sized rectangles pattern papers for the backing of my pictures--I think it turned out fun!

I LOVE that I could use these old pictures from my picture box...my kids were SO excited when I brought home these chef hats for them--they had to get RIGHT to baking! ;)

First off--HELLO! I have NOT fallen off the face of the planet--I'm just living my busy, crazy, insanely full life with my BEAUTIFUL family!  Thank you to those that are patient and are still here!  I promise I am still creating and posting just focusing on my family these last few weeks-exciting things have happened for sure!
