What we ate; pinterest inspired: Cauliflower Crusted Grilled Cheese Sandwiches

These were YUMMY-and no it didn't taste like Cauliflower.  I had these for lunch one day.  If you want picture for picture tutorial-click on the link above.  The only thing that I changed was to add a sprinkle of garlic because I love it!

INGREDIENTS:

  • 1 medium head of cauliflower (raw), cut into small florets and stem removed
  • 1 large egg
  • 1/2 cup shredded Parmesan cheese
  • 1 tsp Italian herb seasoning
  • *I added a sprinkle of garlic
  • 2 thick slices of white cheddar cheese (you can also use shredded cheddar cheese)
  • DIRECTIONS:

    1. Preheat oven to 450F. Place cauliflower into food processor and pulse until crumbs about half the size of a grain of rice.
    2. Place cauliflower into large microwave safe bowl and microwave for 2 minutes. Your cauliflower should be soft and tender (and hot!). (If you don't want to use the microwave to dry out the cauliflower and prefer to steam and wring with a cloth to dry, check out my wringing instructions here.)
    3. Stir cauliflower to mix up the bottom and top cauliflower. Place back into the microwave and cook for another 3 minutes. Remove and stir again so that all the cauliflower cooks evenly. Place back into microwave and cook for 5 minutes. At this point, you should see the cauliflower is starting to become more dry. Microwave for another 5 minutes. Cauliflower should still be slightly moist to the touch, but should look dry and clumped up (like photo above; similar to as if someone had chewed it up and spit it back out.) If you've made cauliflower pizza or breadsticks with the cloth wringing dry method, it should look the same.
    4. Allow cauliflower to cool for a few minutes. Then add in egg and cheese. Stir to combine until smooth paste forms. Stir in seasoning. Divide dough into 4 equal parts. Place onto large baking sheet lined with parchment paper. Using your knuckles and fingers, shape into square bread slices about 1/3 inch thick. Bake cauliflower bread for about 15-18 minutes or until golden brown. Remove from oven and let cool a few minutes.
    5. Using a good spatula, carefully slide cauliflower bread off of parchment paper. Now you are ready to assemble your sandwiches. You can do this a few different ways. You can either cook on the stove top as you would normally cook a grilled cheese. You can also place sandwiches into toaster oven and broil for several minutes (5-10) until cheese is completely melted and bread is toasty. If you don't own a toaster oven, you can also do this in the oven.

2018-Project Life, my way

I am finally ready to share the first page of my 2018 of Project Life:
I created this myself in Photoshop Elements:

     I purchased this cactus digital stamp from Creative Bubble, you can see it HERE.  And yes, further on I use more of these stamps in a week layout.  I decided to minc foil this cactus in green.

     I want to keep things simple and clean.  For the the pictures-I took these on Christmas day but they are the most recent pictures I have each of my family.  I ALWAYS love to include pictures of my family on the first page of the year.
     For my album I decided to go with the 9" x 12"-I REALLY like this size-not so much real-estate to cover.  I chose the color Mint Hint, last year I used Purple Rain- you can see the albums HERE, I was able to purchase my albums with a coupon.
     For the rest of my spread I used my stash-yeah!  Stay tuned in the next few weeks I'll be sharing more-now I can "catch up" on last years PL, and December Daily!

Creativation-aka CHA

okay, so I'm old school and Creativation is a mouth FULL... ;) In my heart it will always be CHA!  So I get to go on Saturday as a spectator, I'm pretty excited to see the new stuff and be inspired by crafty people and see some friends that are AMAZING creators.  I will do my best to keep my Instagram HERE feed current and add to my stories (now that I know how!) of all the interesting things I see so STAY TUNED!  And if there is ANYTHING that you want to see-let me know!

Project Life my way...

I shared the other day that I was cleaning out my stash-this is what it looked like when I was done:
this picture doesn't show the magnitude of what is in the boxes but they have a home!  I'm really excited that what is in these bags and boxes will be going to a special needs adult art program.  I asked my friend for pictures of the creations that they make and when I get them I'll be sure to share them here.  Such a wonderful relief to have my front room back, know what I have!  I don't think I've done a de stashing like this for years...

Okay, onto the Project life my way.  I figure if I can do it MY way or what works for me then it will get done.  I think one thing to remember is to be patient with yourself and the time that you have.  In my case it's working on things a little at a time.  For instance this morning before I go to the gym and while waiting for my son to be ready for school I foiled these cards:
I love how they turned out!  I grabbed these from Etsy-you can find the link HERE.  I added the year in Photoshop Elements using the font Arsenal White-you can find that HERE.  I decided to go a bit digital and work on the journaling in Photoshop-it will most likely be more legible and I can fit more writing on it.  I'm not 100% sure how I am going to print my images but for right now I edited them in Photoshop (sometimes with digital stamps) and then print them on my photo printer.  I may go back to printing from Costco or Snapfish I know there are other places to print but that is what I have used in the past depending on sales, and speed.  I use Photoshop because I can create 3x4 images of those pictures that don't have a lot of detail but I want to help tell my story.

One other thing that I have finally discovered is that this Project Life things is the story of my family told in MY voice.  Not someone elses-now that may sound simple but I had a light bulb moment.  I wasn't enjoying it because I was trying to use a system and story that wasn't mine.  That isn't real-yes, it was pretty but not MY story.  That being said I have thought about color schemes-do I got with one?  I think it all depends on the week-I really want to keep it simple and uncluttered-I think that is why the planner craze hasn't really appealed to me much.  I have a planner-I have actually ALWAYS had a planner-I just don't want it cluttered with other things like stickers.  It's my list of to do's, meal planning and other items.

So, I may be rambling but I want to continue to share with you how my project is coming together.  I may or may not have time to work on it today.  I have some test taking to do for my coaching and laundry to do but at least I have my weekly cards READY!

Happy New Year!

Yep it's the 12th of January and here I am posting after a LONG hiatus from blogging.  You see December was a bit of a blur-my daughter got married, I celebrated an anniversary, Christmas, school break, traveling to open house, concerts...PHEW!  I was taking pictures-I have a December Daily assembled (albeit from 2015, I took the year off and put 2017) My son keeps asking me how the December thingy is going...umm...it's not!  But that is my goal for this month-to get it all journaled!

Are you a huge goal setter?  I like to set goals that are daily, weekly or monthly.  I find if I go any further than that I sort of lose my momentum.

So today while watching the last episode of Stranger Things season 2 (in the middle of the day!) I was designing Project Life note cards-I plan on doing most of my journaling digitally-to save time.  This is something new for me-new is good!  I was inspired by this post by my creative buddy Laura Vegas, HERE it's from last year but got me to thinking just how I wanted to do MY Project Life.  I'm excited about it!

So this past week I started my coaching job at the High School.  The track coach asked me if I would like to coach the sprints.  I seriously JUMPED at the chance, I ran track in elementary school, junior high, high school and a year in college.  The kids are great in preseason!  They have asked me some of the funniest questions, one: are you a biology teacher?  What?!  No.  Well, you know so much about stretching and nutrition.  Umm..yeah-STILL an athlete with athletic children! ;)  I really wanted to tell them..."I'm smart!"  Yesterday they were trying to figure out what to call me...Coach?  Waite?  Duwb?  (I'm thinking that will probably stick...)
