pinterest food find. oven baked parmesan seasoned fries

I have a confession to make, I LOVE fries--I REALLY do!  these are SO delicious:
Oven Baked Parmesan Seasoned Fries

NOTE: The amounts listed are for every one pound of fries. One pound of fries is the equivelant of appoximately 3 medium potatoes. (I just double or triple the recipe to fit within my needs).

Ingredients:

1 pound of medium russet potatoes (approx 3 medium potatoes)
1 1/2 TBSP of Extra Virgin Olive Oil
1/4 tsp Dried Thyme
1/4 tsp Dried Oregano
1/8 tsp Dried Rosemary
1/4 tsp of Garlic Powder
1/4 tsp of Old Bay Seasoning
2 TBSP of Kraft Parmesan Style Grated Cheese (I used reduced fat)

Directions:

*Preheat oven to 425.
*Wash and cut potatoes into 1/8ths. 
*Place on a cookie sheet that has been lined with foil (I used Reynolds Release foil so that they will not stick, but you could also either use non-stick cooking spray or lightly grease the top of the foil with extra virgin olive oil). 
*Mix all of the spices and the parmesan cheese in a small bowl.  
*Place all of the potatoes (remember we are talking about one pound at a time) into a gallon size freezer bag, add olive oil and the parmesan cheese/spice mixture to the bag.  
*Seal the bag and shake until the potatoes are evenly coated.
*Once thoroughly coated dump onto the prepared cookie sheet and spread in a single layer.
* Bake 30-45 minutes or until tender and lightly golden brown. (Baking times will vary depending on the amount of fries that you make and the size that you cut them). For the ones shown in the picture they were baked at 425 for 45 minutes.

Homemade Cheesy Beef-a-roni

16 oz box elbow macaroni
1 lb ground beef
2 (15 oz) cans tomato sauce
2 teaspoons dried, minced onion
1 teaspoon basil
1 teaspoon thyme
1 teaspoon oregano
1/2 teaspoon kosher salt (to taste)
2 cups shredded cheddar cheese

Cook macaroni in boiling water until done, about 6 minutes, drain. While pasta is cooking, brown ground beef in a large skillet, drain. Add beef back to the skillet and add in tomato sauce, onion, basil, thyme, oregano, and salt. Simmer for 10 minutes on medium-low heat. Taste sauce and add additional salt if needed. Add cooked macaroni to tomato sauce mixture, turning to coat well. Spread half of macaroni mixture in the bottom of a 4 quart baking dish. Sprinkle 1 cup cheddar over, then repeat layers with remaining macaroni and cheddar. Bake in 350 oven for 20 minutes or until cheese is melted and casserole is heated through.

  • 3 cups frozen whole strawberries
  • 1 cup Silk Almondmilk Original
  • ½ cup ice
  • 2 tablespoons agave nectar or maple syrup (optional)

scrapbook circle Mood board.

I got to work with this month's Mood board challenge at Scrapbook Circle:
I just LOVED working with this month's mood board!  I was really drawn to the turquoise blue, gray, pink, and metallics.

For this particular layout I wanted a special picture, I found this one of brother and my mom from a few years ago.  I prefer working with colored pictures when I scrapbook, but sometimes when you have a particular color scheme working with a colored photo is difficult.  Thankfully they were both wearing black and the colors in the background were just perfect!

I wanted to add a little something to my page that "reminded me" of the pineapple fringe.  I used my Martha Steward fringing scissors and a 6 x 6 sheet from the Sweet Day add on.  I cut the sheet to 1 1/2" x 6.  I then stacked them one on top of the other and cut.  I then adhered them to my page behind my picture--you can't see where they line up.  I use a lot of 6 x 6 papers on my pages with little tricks like covering them up or using them to Matte a picture (which I also did here)
After my page was completed I covered my picture with a scrap piece of paper and sprinkled my gold mist in drops on my page.  I then dipped a paint brush into the gold mist and painted the edges.

On (inter) NATIONAL scrapbook day (May 2), I was all ready to create!  Desk was clean things were put away, I had TIME and NO MOJO!  Ugh!  I hate that when that happens!!  

I woke up at 6am, I did some things around the house (laundry, dishes), NOTHING, I decided to go for a run (I should actually say a jog or maybe race walking but not even that...)--came back showered and NOTHING!  I looked at challenges, blogs, and BEAUTIFUL creations...I decided to take a nap!  I got up from my nap and pushed some papers around.  I then decided to load some past layouts up on Scrapbook.com, and lo and behold miracle of miracles!  Inspiration hit!  

I was watching a class taught by the talented ms. Rebecca Keppel on how to use gelatos...I have some  gelatos and haven't used them for a while.  I was inspired and actually used 3 techniques she described in her videos.  Here is my layout and closeups of 3 different ways I used my gelatos:

 I had a GREAT time, and I actually created something I like!  BONUS!!!

if you have followed me for a while you will recognize these pictures or maybe not! ;)  These are the last of this particular grouping--this was from 4 years ago at Thanksgiving time--I love the randomness of the photo shoot.  My kids were hesitant but their cousins were ALL for it!

Hershey Brownies

Hershey Brownies
Ingredients:
  • 1/2 cup flour
  • 1/3 cup cocoa
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1 cup walnuts, broken into pieces (optional)


Instructions

Preheat oven to 350 degrees. Line a 9" square pan with foil and butter the foil. Sift together flour, cocoa, baking powder, and salt. Melt butter in a 10 - 12 cup saucepan over moderate heat. Stir in sugar and vanilla, and add eggs one at a time. Stir in dry ingredients, and stir in nuts. Spread smoothly in prepared pan. Bake 20 - 25 minutes, or until toothpick inserted in the center just barely comes out clean.
Cool in pan 15 minutes. Cover with rack and turn pan over. Remove pan and foil lining. Cover with a cutting board and turn back over again.
Let stand until cool.
