Easy Strawberry Lemonade Recipe
Recipe type: Beverage

Serves: 8
Quick and easy Strawberry Lemonade- so refreshing!
  • Strawberries (8 medium to large or 10 small)
  • ½ cup to 1 cup sugar
  • 2 tablespoons sugar
  • 6-7 cups water*
  • 2 cups fresh squeezed lemon juice
  1. Start by squeezing your lemons to get 2 cups juice- about 8 lemons or so.
  2. Set aside.
  3. Add your strawberries to a blender or food processor- if your berries are really large you might slice them in half.
  4. Puree for a few seconds and add 2 tablespoons sugar and 1 cup water.
  5. Blend until you get it down to a nice juice.
  6. Now add the strawberries to your lemon juice.
  7. Add from ½ cup to 1 cup of sugar to the mixture- depending on your sweetness preference.
  8. Add 5 to 6 cups of water.
  9. Chill very well before serving over ice!

pinterest food finds. Vanishing Oatmeal Cookies

okay--we used to make these all the time at my house growing up.  I made them the other day and couldn't STOP eating them, they are SOOO good:
Vanishing Oatmeal Raisin Cookies
Quaker Oatmeal Recipe


  • 1/2 pound (2 sticks) butter, softened
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt (optional)
  • 3 cups Quaker Oats (quick or old fashioned, uncooked)
  • 1 cup raisins


1. Heat oven to 350 degrees.

2. Beat together butter and sugars until creamy.

3. Add eggs and vanilla to the butter mixture, beat well.

4. Add combined flour, baking soda, cinnamon and salt; mix well.

5. Stir in oats and raisins; mix well.

6. Drop by rounded tablespoonfuls onto ungreased cookie sheet. 

7. Bake 10-12 minutes or until golden brown.

8. Cool 1 minute on cookie sheet; then remove to wire rack.

rainy day.

 Be Real, I was challenged on the Scrapbook Circle blog to use and scrap a instagram picture. Using the instagram picture gave me the opportunity to scrap about what is happening RIGHT now with me.

I loved the water color papers and embellishments included in the kit--I could FINALLY scrap this picture! ;)  I was really excited to be able to capture the rain drops on the outside of my windshield--the more I looked at the picture the more things I realized I captured:
the clouds.
the color of the sky.
the portables at the school.
the lights.
All of these little details helps tell where I am, waiting to pick up my daughter from the High School after her soccer practice.

I tried to copy that feel by painting my back ground with a pearl mist.
(When I say paint I literally mean sticking my paint brush in the container knocking the drops off and then painting the background.)

pinterest food finds. magic broccoli

if you are a fan of broccoli...this is DELICIOUS!
  • 2 medium heads of broccoli (see notes)
  • 2 garlic cloves, finely sliced
  • 4 tbsp extra virgin olive oil, separated
  • ½ tsp salt (adjust to your taste)
  • Black pepper
  • Zest of half a lemon
  • 1½ tbsp lemon juice
  • 2 tbsp freshly grated parmesan cheese
  1. Preheat oven to 180C/350F.
  2. Cut broccoli into florets and piled onto baking tray.
  3. Drizzle with 2 tbsp extra virgin olive oil, scatter with garlic, salt and pepper. Use your fingers to toss, then spread out over tray in a single layer. Adjust salt to your taste.
  4. Bake for 20 to 25 minutes until the tips of the florets are slightly browned. The broccoli should be "tender crisp", meaning just cooked through, not overcooked and floppy.
  5. Remove from the oven and immediately drizzle over the lemon juice and remaining 2 tbsp olive oil. Toss to combine. Scatter over lemon zest and parmesan cheese. Serve immediately.
1. You need enough broccoli florets to fill a baking tray in a single layer. The broccoli shrinks while baking.
2. Reserve the stalks to use in stir fries or finely dice them and use in soups, fried rice, casseroles or even hide them in things like pasta sauces.
3. Please don't cut down on the oil. You simply won't get the caramelisation when roasting!

our story--today.

I made this layout for a design team choice on the Scrapbook Circle blog--I challenged myself to usual visual triangles, there are 5--do you see them?
product used: Here's the Story

in no particular order:
-the ink splatter (totally not planned–just happened to drop that way!)
-the hearts (gold underneath Our Story, puffy sticker, and heart on the veneer happy moments)
-the circles (title our story, subtitle happy, gold heart peeking out underneath the yellow star)
-the triangle shapes (underneath the happy circle, the cork shape, the piece of paper underneath the puffy heart)
-the gold (harder to tell in this layout but the tiny heart under our story is gold, the circle under the star is gold, and the today are gold letters)

Pinterest Food Find. Chicken Noodle Soup.

This recipe was EASY and SO delicious!


1 tbsp butter
12 cup onion, chopped
12 cup celery, chopped
4 can (14.5 ounces each) chicken broth
1 can (14.5 ounce) vegetable broth
12 lb cooked chicken breast, chopped
12 cup egg noodles
1 cup carrots, sliced
12 tsp dried basil
12 tsp dried oregano
1 salt, to taste
1 pepper, to taste


  1. In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

pinterest food finds. cheesy quinoa and broccoli patties

Intrigued?   My family LOVES these--I dream of these, they are delicious!


1/2 cup quinoa
1 cup water
5 large broccoli florets
1 small onion, diced
1/4 cup breadcrumbs
1/4 cup shredded cheese
1 large egg
Salt and Pepper for seasoning
Olive oil for cooking

1. First, cook your quinoa according to the directions on the packaging. I cooked mine by combining 1/2 cup of quinoa with 1 cup of boiling water, then letting it come to a boil, and simmering, covered for about 15 minutes. Once the quinoa has absorbed all the water (this shouldn’t take longer than 15 minutes), put it on a plate and let it cool completely.
2. Next, saute your diced onion until it’s soft and translucent. Set aside and let cool completely. Cook your broccoli until it has softened a little bit, then let it cool as well. Once the broccoli has cooled completely, dice it into small pieces.
3. Now that you have everything ready, in a large bowl, mix all the ingredients together, leaving the egg until the end. Mix well so you have a smooth, wet mixture that will allow you to make patties that will stick together.
4. Heat some olive oil in a pan, and make your patties. I made each using 1/4 cup of the mixture. Just make a ball out of the mixture, and squash it down a little bit. Cook each patty for about 7 – 8 minutes on each side on medium heat. You want the patty to develop a crust, but not to burn, so watch them carefully. Let cool for a couple of minutes before eating.
